Over the coming days, MajorLeagueEating.com will share some classic recipes that are a great fit for your big game party. By "big game" we mean the Super Bowl. By "party" we mean karamu. Since it'll be gray skies in Green Bay for another eight months, let's start with a couple Packer treats. Yep, Lambeau Logs and Packer Crackers coming your way now....
LAMBEAU LOGS
Line up: 1 ½ pound of loose breakfast sausage meat 1 cup diced green onion 1 teaspoon of red pepper flakes Hot honey mustard One box of puff pastry (Pillsbury or Pepperidge Farm) Game Plan: Mix sausage, onion and red pepper flakes together in a skillet and c ook until medium well. Lay the puff pastry sheets flat and cut them into strips of two to three inches. Spoon honey mustard on each strip. Spoon sausage mixture on each strip. Roll the strips and place on a cookie sheet. Place cookie sheet on grill and cover. After ten minutes roll strips so they don’t burn on one side. Depending on the heat of your grill these will take 15 minutes or more. Don’t place directly on grill as the flames will burn the puff pastry.
PACKER CRACKERS
Line up: 3 sticks of unsalted butter 1 pound of Wisconsin cheddar shredded (cheddar or something with a bite) table salt paprika 4 cups white flour Process: Make these a day ahead. Blend butter, cheese, 1 to 2 teaspoons of salt and a teaspoon of paprika at low or medium and slowly add the flower until mixture is fully blended. Pre-heat oven to 350. With a pie roller flatten the mixture to 1/3 inch width. Place six inch long pieces on a greased cookie sheet. Bake for 10 to 15 minutes when the crackers will be crisped and light brown. Fully cool then bag for game day.
